The friends make a small range of sparkling wines, all from handpicked grapes and made by the Traditional Method in the winery close to Mendoza itself. They started the project after leaving university ten years ago with the aim of making unique and exciting wines from Argentina. Unsurprisingly, given his heritage and wide travels across the wine world, Sebastian leads the project. He is a dynamic, charismatic winemaker who keeps one eye on quality and the other firmly on the enormous potential for innovation within Argentina.
Vineyards
The grapes were taken from the Zuccardi family‘s high altitude vineyards of Tupungato (for freshness) as well as Vista Flores and Santa Rosa, giving excellent fruit intensity and flavour.

Vinification
The grapes were pressed as soon as they entered the winery, which minimised extraction from the skins and ensured a fine, elegant texture to the wine. The first fermentation was cool, at around 15-18°C for 20 days, which preserved the delicate apple, pear and red berry character. The wine was aged using the Traditional (Champagne) Method for over two years on its lees, giving it a toasty complexity and mellow, long finish. The dosage is low, at approximately six grams per litre, which allows the fruit to shine through
Tasting Notes
The 2007 is pale yellow in colour with a fine mousse and aromas of pear and red berries, with hints of toast and almond. The palate is fresh and medium-bodied, with excellent complexity of apple, pear and honey. The finish is long and fine-textured, with lively acidity matched by juicy red fruit flavours.
